Your Responsibilities
  • Prepare and supervise food production in line with standard recipes, menu cycles, Uniworld quality standards, cost control, and HACCP hygiene procedures.
  • Ensure elegant food presentation with correct temperature, texture, portion size, and taste.
  • Manage ordering, stock levels, and inventories, ensuring FIFO, labelling, and temperature control.
  • Ensure attractive, balanced crew meals in line with company guidelines.
  • Lead daily kitchen and F&B briefings, conduct appraisals, and support onboarding of new team members.
  • Ensure cleanliness of all working areas in compliance with hygiene standards.
  • Communicate regularly with the assigned Corporate Chef, reporting on cruise operations, feedback, and suggestions.
  • Maintain the menu cycle and make changes only in emergencies (e.g., itinerary adjustments, unavailable items, or seasonal demands), submitting any changes for Corporate Chef approval with supporting documentation.
  • Train and guide team members on standard recipes, menu cycles, hygiene, and Uniworld standards.
Specific Requirements
  • Luxury culinary skills and experience in four- and five-star hotels and/or ships.
  • Collaborate with the Corporate team and Culinary Director to introduce local dishes, sourcing locally when approved by the Hotel Manager and Corporate Chef.
  • Minimize food waste and overproduction, reporting usage to the Executive Chef.
  • Enhance the guest experience through the “up-serve” approach, combining personalized service with support for onboard revenue targets.
  • Organize schedules, supervise attendance, and ensure adherence to legal working hours.
  • Host and socialize with guests, fulfill special requests, and escalate complaints to the Hotel Manager.
  • Proficiency in Microsoft Office and other relevant systems (e.g., Mariner X’Change, company recipe database).
  • Actively participate in assigned learning activities, training sessions, and mandatory safety or emergency drills.
  • Contribute to ship preparation during end-of-season close-down and start-of-season set-up.
  • Demonstrate strong proficiency in English, both spoken and written.
